Ingredients:

1 sheet puff pastry

Instructions:

4. Prepare Zucchini: Thinly slice the zucchinis.

5. Arrange Toppings: Evenly divide and arrange the zucchini slices over the puff pastry squares, leaving a small border around the edges. Sprinkle with the chopped scallions and peas.
6. Add Cheese and Mint: Crumble the Persian feta cheese over the top of the vegetables on each tart. Scatter the roughly chopped spearmint over each tart as well.
7. Bake: Place the tarts in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed and golden brown.
