Beef and potato curry is a delicious and hearty dish that combines tender beef, soft potatoes, and a rich blend of spices. This recipe creates a comforting meal perfect for dinner, offering a warm and satisfying experience for your taste buds.

Ingredients:

Instructions:

1. Prepare the Rice:
- Rinse the white rice under cold water until the water runs clear.
- In a medium saucepan, combine the rice with 3 cups of water (twice the volume of rice).
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is fully absorbed.
- Fluff with a fork and set aside.
2. Cook the Beef:
- Heat 1 tablespoon of olive oil in a large skillet or pot over medium-high heat.
- Add the beef pieces and cook until browned on all sides. This should take about 5-7 minutes.
- Remove the beef from the skillet and set aside.
3. Sauté the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the grated fresh ginger and minced garlic to the onions and sauté for another 2 minutes, stirring constantly.
4. Build the Curry:
- Sprinkle the curry powder over the onion, ginger, and garlic mixture. Stir well to combine and cook for 1-2 minutes to release the flavors of the curry powder.
- Add the cubed potatoes to the skillet and stir to coat them with the spices.
- Return the browned beef back to the skillet.
5. Simmer the Curry:
- Pour in 2 cups of water, stirring to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Cover the skillet and let it simmer for about 25-30 minutes, or until the potatoes are tender and the beef is cooked through. Stir occasionally to prevent sticking.
6. Finish the Curry:
- Once the beef and potatoes are fully cooked, stir in the Greek yogurt to add a creamy texture and balance the flavors.
- Season with salt and pepper to taste.
7. Serve:
- Serve the beef and potato curry over the cooked white rice.
- Optionally, garnish with fresh cilantro or a squeeze of lime juice for added freshness.
