Beef and potato curry

Beef and potato curry is a delicious and hearty dish that combines tender beef, soft potatoes, and a rich blend of spices. This recipe creates a comforting meal perfect for dinner, offering a warm and satisfying experience for your taste buds.

Ingredients:

2 tbsp olive oil
27g
1 lb beef
450g
3 potatoes
600g
1 onion
160g
1 tsp ginger root
5g
2 garlic cloves
6g
1 tsp curry powder
5g
1.50 cups white rice
300g
1/4 cup greek yogurt
60g
2 cups water
500g

Instructions:

1. Prepare the Rice:
- Rinse the white rice under cold water until the water runs clear.
- In a medium saucepan, combine the rice with 3 cups of water (twice the volume of rice).
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is fully absorbed.
- Fluff with a fork and set aside.
2. Cook the Beef:
- Heat 1 tablespoon of olive oil in a large skillet or pot over medium-high heat.
- Add the beef pieces and cook until browned on all sides. This should take about 5-7 minutes.
- Remove the beef from the skillet and set aside.
3. Sauté the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the grated fresh ginger and minced garlic to the onions and sauté for another 2 minutes, stirring constantly.
4. Build the Curry:
- Sprinkle the curry powder over the onion, ginger, and garlic mixture. Stir well to combine and cook for 1-2 minutes to release the flavors of the curry powder.
- Add the cubed potatoes to the skillet and stir to coat them with the spices.
- Return the browned beef back to the skillet.
5. Simmer the Curry:
- Pour in 2 cups of water, stirring to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Cover the skillet and let it simmer for about 25-30 minutes, or until the potatoes are tender and the beef is cooked through. Stir occasionally to prevent sticking.
6. Finish the Curry:
- Once the beef and potatoes are fully cooked, stir in the Greek yogurt to add a creamy texture and balance the flavors.
- Season with salt and pepper to taste.
7. Serve:
- Serve the beef and potato curry over the cooked white rice.
- Optionally, garnish with fresh cilantro or a squeeze of lime juice for added freshness.

Tips:

- To enhance the flavor, marinate the beef with a bit of olive oil, garlic, and ginger for at least 30 minutes before cooking.

- Dicing the potatoes into smaller, uniform pieces will help them cook faster and evenly.

- If you prefer a spicier curry, add extra curry powder or a dash of cayenne pepper.

- Consider using a slow cooker for a more hands-off approach. Cook on low for 6-8 hours or on high for 3-4 hours.

- Garnishing with fresh cilantro or parsley at the end can add a fresh touch to your curry.

This beef and potato curry is not only scrumptious but also easy to prepare, making it an ideal dish for both weeknight dinners and special occasions. Serve it with a side of white rice and a dollop of Greek yogurt to elevate the flavors. Enjoy the perfect blend of spices and the hearty texture that this dish brings to your table.
