- Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa has absorbed all the water and is tender.
- Once cooked, fluff the quinoa with a fork and allow it to cool completely.
2. Prepare the fruits:
- Rinse the blueberries and set aside.
- Wash the strawberries, remove the stems, and slice them.
- Peel the banana and slice it into thin rounds.
3. Layer the parfait:
- In a glass or bowl, add a layer of Greek yogurt (about 1/3 cup).
- Add a layer of cooled quinoa (about 1/4 cup).
- Layer some of the blueberries, strawberries, and banana slices.
- Repeat the layers one more time with the remaining yogurt, quinoa, and fruits.
