1/2 cup sugar

3. Egg Whites:
In a separate clean, dry bowl, whisk the egg whites until they are frothy and form soft peaks. You don’t need to beat them to stiff peaks; just until they’re frothy.
4. Combine Wet and Dry Ingredients:
Make a well in the center of the dry ingredients and gently fold in the frothy egg whites. Be careful not to overmix.
5. Add Butter:
Gradually pour in the melted butter and gently fold the mixture until just combined. The batter should be light and fluffy.
6. Add Blueberries:
Carefully fold in the blueberries, leaving a handful for topping.
7. Fill the Tins:
Spoon the batter into the prepared friand or muffin tin, filling each hole about two-thirds full. Place a few of the reserved blueberries on top of each friand for a nice presentation.
8. Bake:
Bake in the preheated oven for about 20-25 minutes, or until the friands are golden brown and a skewer inserted into the center comes out clean.
9. Cool:
Let the friands cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
10. Serve:
Dust with a bit of powdered sugar if desired, and enjoy your delicious blueberry and coconut friands with a cup of tea or coffee!
