Instructions:

1. Preheat Oven:

2. Prepare the Chicken:
- Rinse the chicken thighs and pat them dry with paper towels.
- Season the chicken with a pinch of salt and pepper.
- In a large skillet over medium-high heat, cook the chicken thighs until they are no longer pink inside, about 5-7 minutes per side.
- Once cooked, remove the chicken from the skillet, let it cool slightly, and then shred it into bite-sized pieces using two forks.
3. Make the Casserole Mix:
- In a large mixing bowl, combine the shredded chicken, salsa sauce, chili powder, and finely chopped red hot chili pepper. Mix well to ensure the chicken is evenly coated with the sauce and seasoning.
4. Assemble the Casserole:
- Spread half of the chicken and salsa mixture evenly at the bottom of a 9x13 inch (23x33 cm) baking dish.
- Sprinkle half of the black beans over the chicken mixture.

- Sprinkle half of the shredded cheddar cheese on top.
- Repeat with the remaining chicken and salsa mixture, black beans, and the second tortilla.
- Finish with the remaining cheddar cheese on the top.
5. Bake the Casserole:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is fully melted and bubbly.
6. Prepare the Fresh Toppings:
- While the casserole is baking, chop the lettuce, tomatoes, and jalapeno pepper. Set aside.
7. Add the Toppings:
- Once the casserole is done baking, remove it from the oven and let it cool for about 5 minutes.
- Generously sprinkle the shredded lettuce, chopped tomatoes, and jalapeno pepper over the top of the casserole.
