Instructions:

1. Preheat the Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Ingredients: Peel and finely chop the onion. Mince the garlic cloves. Halve the leek lengthwise, wash thoroughly to remove any grit, and thinly slice. Chop the fresh dill.
3. Cook the Salmon:
- Pour the milk into a large saucepan and add the bay leaf.
- Gently heat the milk over medium heat until it's just about to boil.
- Add the salmon chunks to the milk. Poach gently for about 5-7 minutes until the salmon is just cooked through.
- Remove the salmon with a slotted spoon and set aside. Strain the poaching liquid, discard the bay leaf, and reserve the milk.
4. Prepare the Filling:
- In a large pan, melt the butter over medium heat.
- Add the chopped onion, leek, and garlic, and cook for about 5-7 minutes until soft and fragrant.
- Stir in the flour and cook for another 2 minutes, constantly stirring to avoid lumps.
- Gradually whisk in the reserved poaching milk, creating a smooth, thick sauce. Continue to cook, stirring, until the sauce thickens (about 5 minutes).
- Add the cooked salmon chunks, dill, and ground nutmeg. Season with salt and pepper to taste. Gently fold everything together, ensuring the salmon stays chunky. Remove from heat and let it cool slightly.
5. Prepare the Puff Pastry:
- On a lightly floured surface, roll out one sheet of puff pastry to line the base and sides of a pie dish (about 9 inches in diameter).
- Add the cooled salmon and leek filling into the pastry-lined dish.
6. Top with Pastry:
- Roll out the second sheet of puff pastry. Place it over the filling, trimming any excess.
- Press and crimp the edges together to seal the pie.
- Beat the egg and brush it over the top of the pastry to give it a golden finish.
