Instructions:

1. Preheat the Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Ingredients: Peel and finely chop the onion. Mince the garlic cloves. Halve the leek lengthwise, wash thoroughly to remove any grit, and thinly slice. Chop the fresh dill.
3. Cook the Salmon:
- Pour the milk into a large saucepan and add the bay leaf.
- Gently heat the milk over medium heat until it's just about to boil.
- Add the salmon chunks to the milk. Poach gently for about 5-7 minutes until the salmon is just cooked through.

5. Prepare the Puff Pastry:
