Instructions:

1. Prepare the Lamb Mixture:
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onions become translucent, about 5 minutes.
- Stir in the tomato puree and cook for another minute.
- Add the lamb mince to the skillet, breaking it up with a spoon. Cook until the lamb is browned and cooked through, about 8-10 minutes.
- Sprinkle in the dried oregano, and season with salt and pepper to taste. Stir well to combine. Remove from heat and set aside.
2. Prepare the Pita Chips:
- Preheat your oven to 375°F (190°C).
- Cut the pita breads into bite-sized pieces or triangles.
- Arrange the pita pieces on a baking sheet in a single layer. You may need to use multiple baking sheets.
- Bake in the preheated oven until the pita pieces are crispy and golden, about 10-12 minutes. Check frequently to prevent burning.
- Remove from oven and set aside to cool.
3. Prepare the Toppings:
- Dice the red peppers.
- Slice the olives.
- Dice the cucumber.
- Toast the pine nuts in a dry pan over medium heat until they are golden brown. Stir frequently to prevent burning.
- Chop the spearmint.
4. Assemble the Nachos:
- Spread the crispy pita chips on a large serving platter or tray.
