Ingredients:

3 sheets puff pastry

Instructions:

1. Preheat Oven:
Preheat your oven to 200°C (392°F). Place a baking sheet in the oven to heat up.
2. Prepare Puff Pastry:
Roll out the puff pastry sheets on a lightly floured surface and cut them to fit your tart tin (approximately 25cm x 25cm or 10"x10"). Line the tart tin with the pastry, pressing gently into the corners, and trim any overhanging edges.
3. Blind Bake:
Prick the base of the pastry with a fork to prevent it from puffing up. Line the pastry with baking paper and fill with baking beans or dry rice. Blind bake the pastry in the preheated oven for about 10 minutes. After 10 minutes, remove the baking paper and weights, then bake for an additional 5 minutes or until lightly golden. Set aside to cool slightly.
4. Prepare Filling:
In a medium frying pan, melt the butter over medium heat. Add the sliced mushrooms and cook until they start to soften and release their juices (approximately 5-7 minutes). Add the minced garlic and dried oregano, cooking for an additional 2 minutes until fragrant. Remove from the heat and set aside to cool.
5. Mix Egg Mixture:
In a medium bowl, whisk together the eggs and light sour cream until smooth. Season with a pinch of salt and pepper to taste.
6. Assemble Tart:
Spread the cooked mushroom mixture evenly over the base of the baked puff pastry shell. Pour the egg and sour cream mixture over the mushrooms, ensuring an even coating. Sprinkle the crumbled feta cheese on top.
7. Bake Tart:
Place the tart back into the preheated oven and bake for about 25 minutes, or until the filling is set and the top is golden brown.
8. Cool and Serve:
