Instructions:

1. Prepare Ingredients:
- Wash the spinach and spearmint leaves thoroughly under cold water and set them aside to drain.
- Peel the bananas, chop them into large chunks, and set aside.
- Peel and roughly chop the cucumber. Set it aside.
- Peel, core, and chop the pineapple into chunks. Set aside.
2. Blend:
- Add the 2 cups of spinach to the blender.
- Follow by adding the banana chunks, chopped cucumber, and pineapple pieces.
- Pour in the 1 cup of coconut milk and 1/4 cup of orange juice.
- Add the 1 tbsp of flaxseed oil.
- Toss in the 8 spearmint leaves.
3. Blend until Smooth:
- Secure the blender lid and blend on high until the mixture is completely smooth. This should take about 1-2 minutes. You may need to stop once to scrape down the sides of the blender and ensure everything is incorporated evenly.
4. Serve:
- Once the mixture is smooth and creamy, taste for sweetness. Adjust if needed by adding more pineapple or a bit of honey if desired.
