Instructions:

1. Prepare Ingredients:
- Mince the garlic cloves and grate the ginger root.
- Peel and cube the sweet potatoes.
- Cut the chicken breasts into bite-sized pieces.
2. Heat Peanut Oil:
- In a large pot or Dutch oven, heat 1 tbsp of peanut oil over medium heat.
3. Sauté Aromatics:
- Add the minced garlic and grated ginger root to the pot and sauté for about 2 minutes, until fragrant.
4. Add Spices:
- Stir in the 3 bay leaves, 2 tbsp of curry powder, and 1 tsp of allspice. Cook for another minute to release the flavors.
5. Add Chicken:
- Add the bite-sized chicken pieces to the pot. Cook, stirring frequently, for about 5-7 minutes, until the chicken is no longer pink.
6. Incorporate Sweet Potatoes:
- Add the cubed sweet potatoes to the pot. Stir to combine all the ingredients.
7. Pour in Liquids:
- Pour in 1 cup of chicken gravy and 2 cups of coconut milk. Stir well to combine all the ingredients.
8. Season & Simmer:
- Add 1 tbsp of fresh thyme to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 25-30 minutes, until the sweet potatoes are tender and the chicken is cooked through.
9. Final Adjustments:
- Taste the curry and adjust the seasoning if necessary, adding salt and pepper to taste.
10. Serve:
- Remove the bay leaves before serving. Ladle the curry into bowls and serve hot, ideally with steamed rice or flatbread.
