Instructions:

1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper or a silicone baking mat.
2. Prepare the Filling:
- In a large mixing bowl, combine the lamb mince, finely chopped onion, beaten egg (reserve a small amount for egg wash), bread crumbs, finely chopped parsley, grated carrot, and grated cheddar cheese.
- Mix the ingredients thoroughly until they are well combined.
3. Prepare the Puff Pastry:
- Roll out the puff pastry sheet onto a lightly floured surface if it isn't already in a rectangular shape. Aim for a thickness of about 3mm (1/8 inch).
4. Assemble the Rolls:
- Cut the puff pastry sheet in half lengthwise, so you have two long rectangles.
- Divide the lamb mixture in half and spread each portion evenly along the long edge of each rectangle, leaving a small border for sealing.
- Roll up the pastry tightly around the filling, starting from the edge nearest the filling and rolling away from you, like a sausage roll.
- Position the seam side down and ensure the edges are sealed well.
5. Cut and Glaze:
- Cut each long roll into smaller pieces, roughly 2 inches (5 cm) long, or to your preferred size.
- Place the rolls seam side down on the prepared baking tray.
- Brush the tops of the rolls with the reserved beaten egg to help them turn a golden brown during baking.
6. Bake:
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and cooked through.
