Lamb, feta and spinach sausage rolls

Instructions:

1. Preparation:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
2. Prepare the Spinach:
- If using fresh spinach, wilt it in a pan over medium heat for 2-3 minutes until softened. If using frozen spinach, thaw and drain any excess liquid.
- Once cooked, chop the spinach finely.
3. Mix the Sausage Filling:
- In a large mixing bowl, combine the lamb mince, breadcrumbs, minced garlic, paprika, chili powder, parsley, dill, feta cheese, and chopped olives.
- Add the chopped spinach to the bowl and mix thoroughly until all ingredients are evenly combined.
4. Prepare the Puff Pastry:
- Lay the puff pastry sheets on a lightly floured surface.
- Cut each sheet in half lengthwise, so you have 4 long rectangles.
5. Assemble the Sausage Rolls:
- Divide the sausage filling into 4 equal portions.
