Lamb, feta and spinach sausage rolls

Elevate your snack game with these delicious lamb, feta, and spinach sausage rolls. Perfect as appetizers for a gathering or a savory snack for your family, these rolls offer a delightful combination of rich lamb, tangy feta, and fresh spinach, all wrapped in a flaky puff pastry.

Instructions:

1. Preparation:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
2. Prepare the Spinach:
- If using fresh spinach, wilt it in a pan over medium heat for 2-3 minutes until softened. If using frozen spinach, thaw and drain any excess liquid.
- Once cooked, chop the spinach finely.
3. Mix the Sausage Filling:
- In a large mixing bowl, combine the lamb mince, breadcrumbs, minced garlic, paprika, chili powder, parsley, dill, feta cheese, and chopped olives.
- Add the chopped spinach to the bowl and mix thoroughly until all ingredients are evenly combined.
4. Prepare the Puff Pastry:
- Lay the puff pastry sheets on a lightly floured surface.
- Cut each sheet in half lengthwise, so you have 4 long rectangles.
5. Assemble the Sausage Rolls:
- Divide the sausage filling into 4 equal portions.
- Place a portion of the filling along one long edge of each pastry rectangle. Shape it into a long log, leaving a small border at the edge.
- Brush the border with a small amount of beaten egg.
- Roll the pastry over the filling, pressing the edges to seal, creating a long sausage roll. Repeat with remaining pastry and filling.
6. Cut and Egg Wash:
- Cut each long roll into smaller, bite-sized pieces, typically about 2 inches long.
- Place the sausage rolls on the lined baking sheet, seam side down.
- Brush the tops of each roll with the remaining beaten egg.
7. Add Sesame Seeds:
- Sprinkle sesame seeds evenly over the tops of the sausage rolls.
8. Bake:
- Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the pastry is golden-brown and puffed.
9. Serve:
- Remove the sausage rolls from the oven and allow them to cool slightly before serving.
- Serve warm with your favorite dipping sauce or enjoy them as they are!

Tips:

- Ensure the spinach is thoroughly dried after washing to avoid a soggy filling. You can use a salad spinner to help with this.

- For a touch of extra flavor, add a pinch of dried oregano or thyme to the meat mixture.

- Pre-cook the lamb mince slightly before mixing with the other ingredients to ensure it's evenly cooked.

- When working with puff pastry, keep it cool and handle it as little as possible to maintain its flakiness.

- Brush the pastry with beaten egg for a beautiful golden-brown finish.

- After assembling the sausage rolls, chill them in the refrigerator for 15-20 minutes before baking to help them maintain their shape.

- Serve the rolls with a side of Greek yogurt mixed with a dash of lemon juice and a sprinkle of fresh herbs for a refreshing dip.

These lamb, feta, and spinach sausage rolls are sure to impress your guests and satisfy your own cravings. Serve them warm and enjoy the blend of flavors and textures in every bite. Whether for a party or a cozy night in, these rolls are a versatile and delightful dish.
