2/3 cup butter

Instructions:

1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a friand or muffin pan well to prevent sticking.
2. Prepare the Dry Ingredients:
- In a mixing bowl, combine the powdered sugar, 1/2 cup dried coconut meat, and flour. Whisk together until well-combined.
3. Whip the Egg Whites:
- In a separate, clean bowl, whisk the egg whites until they form stiff peaks. You can use a hand mixer or stand mixer for this to save time.
4. Incorporate the Dry Mixture:
- Gently fold the dry ingredient mixture into the whipped egg whites. Be careful not to deflate the egg whites too much.
5. Add the Lime Zest and Butter:
- Gently fold in the lime zest and melted, cooled butter into the mixture until just combined.
6. Fill the Molds:
- Spoon the batter into the prepared friand or muffin pan, filling each mold about 3/4 full.
7. Top with Coconut:
- Sprinkle the 2 tbsp of dried coconut meat evenly over the tops of the batter in each mold.
8. Bake:
- Place the pan in the preheated oven and bake for 18-22 minutes, or until the friands are golden brown and a toothpick inserted into the centre comes out clean.
9. Cool and Serve:
- Allow the friands to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
