3. Prepare the Batter:
- In a large mixing bowl, whisk the 3 eggs until they are well combined.
- Gradually add the self-raising flour to the whisked eggs, stirring continuously to avoid lumps. Mix until you have a smooth batter.
4. Combine Ingredients:
- Add the mashed chickpeas, chopped coriander, and curry paste to the batter.
- Mix thoroughly until all ingredients are well combined. Ensure the curry paste is evenly distributed throughout the mixture.
5. Cooking the Fritters:
- Heat a non-stick frying pan over medium heat and add a small amount of oil (vegetable or olive oil works well).
