6g
1 tbsp vinegar
16g
1 tbsp fresh thyme
16g
2 cups cherry tomatoes
360g
1 sheet puff pastry
250g
3 cups spinach
90g
1/3 cup feta cheese
72g
2 tbsp olive oil
27g

Instructions:

1. Prepare the Oven and Baking Dish:
- Preheat your oven to 375°F (190°C).
- Lightly grease an ovenproof skillet or baking dish with a bit of olive oil to prevent sticking.
2. Caramelize the Sugar:
- In the prepped skillet or baking dish, sprinkle the 2 teaspoons of brown sugar evenly over the bottom.
- Drizzle the 1 tablespoon of vinegar over the brown sugar.
- Scatter the 1 tablespoon of fresh thyme evenly over the mixture.
3. Arrange the Tomatoes:
- Halve the cherry tomatoes or leave them whole, according to your preference.
- Arrange the cherry tomatoes in a single layer over the sugar, vinegar, and thyme mixture, ensuring they cover the bottom of the skillet or baking dish.
4. Prepare the Puff Pastry:
- Roll out the sheet of puff pastry to fit over the skillet or baking dish.
- Place the puff pastry over the cherry tomatoes and tuck the edges in around the tomatoes.
5. Bake the Tart:
- Place the skillet or baking dish in the preheated oven.
- Bake for about 25-30 minutes or until the pastry is golden brown and puffed up.
6. Wilt the Spinach:
- While the tart is baking, heat 1 tablespoon of the olive oil in a pan over medium heat.
- Add the 3 cups of spinach to the pan and sauté until just wilted.
- Remove from heat and set aside.
7. Assemble the Tart:
- Once the puff pastry is golden and crisp, remove the tart from the oven.
- Let it cool for about 5 minutes.
- Carefully place a serving plate over the skillet or baking dish and invert it quickly to release the tart onto the plate.
8. Serve:
- Scatter the wilted spinach evenly over the tart.
- Crumble the 1/3 cup of feta cheese over the top.
- Drizzle with the remaining 1 tablespoon of olive oil.
- Garnish with extra fresh thyme if desired.
9. Enjoy:
- Serve the Cherry Tomato Tart Tatin warm or at room temperature.

Tips:

- To prevent the puff pastry from becoming soggy, make sure the caramelized mixture is slightly cooled before adding it to the tart.

- For an extra layer of flavor, consider roasting the cherry tomatoes in the oven with a drizzle of olive oil and a sprinkle of salt before caramelizing.

- You can substitute the feta cheese with goat cheese or any other crumbly cheese of your choice for a different flavor profile.

- Ensure the puff pastry is well-chilled before baking to achieve the perfect flaky texture.

- Use a well-seasoned or non-stick skillet to easily invert the tart without sticking.

Your Cherry Tomato Tart Tatin is now ready to be enjoyed. The golden, flaky puff pastry with its luscious topping of caramelized cherry tomatoes, creamy feta, and fresh spinach is sure to impress your family and friends. Serve it warm and savor the delightful mix of flavors and textures.
