3. Add the Peas and Broth:

- Increase the heat to medium-high and bring to a boil.
- Once boiling, reduce the heat to medium-low and let it simmer for about 10-15 minutes, or until the peas are tender.
4. Blend the Soup:
- Remove the pot from the heat. Using an immersion blender, blend the mixture until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender, and blend until smooth. Return the smooth soup to the pot.
5. Add the Mint and Cream:
- Stir in the spearmint leaves and heavy whipping cream.
- Allow the soup to simmer for an additional 5 minutes.
6. Season and Serve:
- Taste the soup and adjust seasoning if necessary with salt and pepper to your liking.
