- In a large bowl, combine 1/2 cup of olive oil, 1/4 cup of honey, and 1 tsp of vanilla extract. Mix well until uniform.
- Add 1 egg to the mixture and whisk until combined.
- Incorporate 1/2 cup of brown sugar and mix until everything is well combined and smooth.
3. Prepare Dry Ingredients:
- In a separate bowl, mix 1.5 cups of all-purpose white wheat flour, 1 cup of oats, 1 tsp of spice mix, and 1 tsp of baking soda. Ensure all dry ingredients are evenly distributed.
4. Combine Mixtures:
- Gradually add the dry ingredients to the wet ingredients, mixing continuously until a uniform, thick batter forms.
5. Incorporate the Berries:
- Gently fold in 1/3 cup of dried cranberries and 1 cup of fresh raspberries. Ensure that the berries are evenly distributed throughout the batter without over-mixing, as this can break the berries apart.

- Pour the mixture into the prepared baking pan, spreading it out evenly with a spatula or the back of a spoon.
7. Bake:
