Peppery Bacon Carbonara with Poached Egg is a delightful twist on the classic carbonara, adding a hint of spice and the rich flavor of poached egg to elevate the dish. This recipe is perfect for pasta lovers looking for a quick and tasty meal that is both comforting and satisfying.

Ingredients:

1/2 tbsp butter

Instructions:

1. Cook the Pasta:
1. Fill a large pot with water and bring it to a rolling boil.
2. Add a pinch of salt to the boiling water, then add the pasta.
3. Cook the pasta according to the package instructions until it’s al dente.
4. Reserve 1/4 cup of pasta cooking water and then drain the pasta. Set aside.
2. Prepare the Bacon:
1. While the pasta is cooking, heat a frying pan over medium heat.
2. Add the bacon pieces to the pan and cook until they are crispy and browned, about 5-7 minutes.
3. Transfer the cooked bacon to a paper towel-lined plate to drain excess fat.
3. Poach the Egg:
1. Fill a medium saucepan with water and bring it to a gentle simmer over medium heat.
2. Crack the egg into a small bowl.
3. Create a gentle whirlpool in the simmering water using a spoon to help the egg white wrap around the yolk.
4. Carefully slide the egg from the bowl into the center of the whirlpool.
5. Allow the egg to poach for about 3-4 minutes, until the white is set but the yolk is still runny.
6. Use a slotted spoon to remove the poached egg from the water and set it on a paper towel to drain.
4. Combine Ingredients:
1. In the frying pan with the bacon fat, add the butter and let it melt over low heat.
2. Add the drained pasta to the pan and toss to coat in the butter and bacon fat.
3. Remove the pan from heat, then quickly stir in the grated Parmesan cheese until it’s evenly distributed and melted through.
4. Stir in the cooked bacon pieces, chopped parsley, and black pepper. If the sauce is too thick, gradually add the reserved pasta cooking water, a tablespoon at a time, to achieve a creamy consistency.
5. Serve:
1. Transfer the pasta mixture to a serving plate.
2. Gently place the poached egg on top of the pasta.
3. Garnish with extra chopped parsley and grated Parmesan cheese if desired.
4. Serve immediately, and enjoy!
