Instructions:

1. Cook the Rice: Begin by cooking 1 cup of white rice according to the package instructions. Once cooked, let the rice cool completely. For best results, use rice that has been cooked and cooled overnight.
2. Prepare Ingredients: While the rice is cooling, prepare all your ingredients. Mince the garlic cloves, dice the onion and carrots, thinly slice the pork fillet, and measure out the peas, soy sauce, sesame oil, and oyster sauce.
3. Scramble the Eggs: Heat a small amount of vegetable oil (about 1 tbsp) in a large wok or frying pan over medium heat. Crack the eggs into a bowl, whisk them, and then pour into the heated wok or pan. Scramble the eggs until fully cooked, then remove them from the pan and set aside.
4. Cook the Pork: In the same pan, add another 2 tbsp of vegetable oil. Increase the heat to medium-high and add the thinly sliced pork. Stir-fry the pork for about 4-5 minutes, or until it is fully cooked and starting to brown. Remove the pork from the pan and set it aside with the scrambled eggs.
