Caffe latte creme caramels

Indulge in the rich and creamy goodness of Caffe Latte Creme Caramels. This delightful dessert combines the deep flavors of espresso with the smooth, creamy texture of a classic creme caramel. Perfect for coffee lovers and dessert enthusiasts, this recipe ensures a sophisticated and comforting treat.

Ingredients:

1 cup sugar
200g
1 tbsp water
16g
1 tsp espresso coffee
5g
1.50 cups milk (1% fat)
360g
1/2 cup heavy whipping cream
120g
3 eggs
150g
1/3 cup maple syrup
72g

Instructions:

1. Preheat Oven:
- Preheat your oven to 325°F (160°C).
2. Prepare the Caramel:
- In a small, heavy-bottomed saucepan, combine 1 cup of sugar and 1 tablespoon of water.
- Place the saucepan over medium heat and cook without stirring until the sugar melts and turns into a golden-brown caramel. This should take about 8-10 minutes. Be careful not to burn it.
- Immediately pour the hot caramel into the bottom of each ramekin, swirling to coat the bottom evenly. Set aside to cool and harden.
3. Make the Coffee Milk Mixture:
- In another saucepan, heat 1.5 cups of milk and 1/2 cup of heavy whipping cream over medium heat.
- Stir in 1 teaspoon of espresso coffee until fully dissolved.
- Continue heating until the mixture is hot but not boiling. Remove from heat.
4. Prepare the Custard Mixture:
- In a large mixing bowl, whisk together 3 eggs and 1/3 cup of maple syrup until well combined.
- Gradually add the hot milk mixture to the egg mixture, whisking constantly to prevent the eggs from curdling.
- Strain the mixture through a fine sieve into another bowl to ensure a smooth custard.
5. Fill the Ramekins:
- Pour the custard mixture evenly into the caramel-coated ramekins.
6. Bake the Crème Caramels:
- Place the filled ramekins in a large baking dish.
- Carefully pour hot water into the baking dish around the ramekins to create a water bath. The water should reach about halfway up the sides of the ramekins.
- Transfer the baking dish to the preheated oven and bake for 35-40 minutes, or until the custards are set but still slightly jiggly in the center.
7. Cool and Refrigerate:
- Remove the ramekins from the water bath and let them cool to room temperature.
- Once cooled, cover the ramekins with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the caramel to soften.
8. Serve:
- To serve, run a knife around the edge of each ramekin to loosen the custard.
- Place a plate over the top of the ramekin and carefully invert it to release the crème caramel, allowing the caramel sauce to drizzle over the custard.
9. Enjoy:
- Serve chilled and enjoy your delicious Caffe Latte Crème Caramels!

Tips:

- Ensure the sugar is completely dissolved when making the caramel to avoid graininess.

- Pour the caramel into the molds quickly as it hardens fast.

- Use a fine sieve to strain the egg and milk mixture for a smoother custard.

- Bake the custards in a water bath to prevent cracking and to ensure even cooking.

- Allow the custards to cool fully and chill them for a few hours or overnight for the best texture and flavor.

- To loosen the custards before serving, run a knife around the edges of the molds.

Your Caffe Latte Creme Caramels are now ready to be enjoyed. With their silky texture and perfect blend of coffee and caramel flavors, these delightful desserts are sure to impress. Serve them chilled, and relish the satisfaction of creating a gourmet delight right from your kitchen.
