Cappuccino custard pots with almond praline

Cappuccino custard pots with almond praline are an elegant and indulgent dessert that perfectly combines the rich flavors of coffee and chocolate with a delightful crunch from almond praline. This recipe is sure to impress your guests and satisfy any sweet tooth cravings.

Ingredients:

1 cup heavy whipping cream
230g
3/4 cup milk (1% fat)
180g
1/3 cup espresso coffee
72g
1/3 cup brown sugar
72g
1 cup milk chocolate
230g
4 yolks
70g
1/2 cup almonds
60g
3/4 cup sugar
150g

Instructions:

1. Toast the Almonds: Preheat your oven to 350°F (175°C). Spread the almonds on a baking sheet and toast them in the oven for about 8-10 minutes, or until they are golden brown and fragrant. Remove from the oven and let them cool slightly.
2. Make the Praline: In a heavy-bottomed saucepan, add 3/4 cup granulated sugar. Heat over medium heat, stirring frequently until the sugar melts and turns into a golden caramel. Be careful not to burn it.
3. Mix in Almonds: Quickly stir in the toasted almonds into the caramel. Pour the mixture onto a baking sheet lined with parchment paper or a silicone mat. Spread it out thinly and let it cool completely until it hardens.
4. Crush the Praline: Once the almond praline is hardened and cooled, break it into pieces and crush it into smaller chunks using a rolling pin or a food processor. Set aside.
1. Heat the Dairy: In a medium saucepan, combine the heavy whipping cream, milk, and espresso coffee. Place the saucepan over medium heat and bring the mixture to just below a simmer. Once heated, remove from the heat.
2. Add Sugar & Chocolate: Stir in the brown sugar until it dissolves completely. Add the finely chopped milk chocolate and stir until melted and smooth.
3. Temper the Egg Yolks: In a separate bowl, lightly whisk the egg yolks. Slowly add a small amount of the hot cream mixture into the yolks, whisking constantly to temper the eggs and prevent them from scrambling. Gradually add the rest of the cream mixture, continuing to whisk until fully combined.
4. Cook the Custard: Pour the mixture back into the saucepan and place it over low to medium heat. Cook, stirring constantly with a wooden spoon or heat-resistant silicone spatula, until the custard thickens and coats the back of the spoon (this will be around 170-175°F or 77-80°C). Be careful not to let it boil.
5. Strain: Once thickened, strain the custard through a fine-mesh sieve into a large measuring cup or bowl to remove any cooked egg bits, ensuring a smooth texture.
1. Pour into Pots: Evenly distribute the custard mixture into small serving pots, ramekins, or cups.
2. Chill: Cover each pot with plastic wrap and refrigerate for at least 3-4 hours until set, or overnight for the best results.
1. Top with Praline: Just before serving, sprinkle the crushed almond praline generously over the top of each custard pot for added crunch and flavor.
2. Enjoy: Serve the cappuccino custard pots chilled and enjoy the fantastic blend of creamy custard, rich coffee flavor, and crunchy almond praline topping.

Tips:

- Ensure to use freshly brewed espresso for the best flavor.

- When making the almond praline, be cautious as caramelized sugar can become very hot and can burn easily.

- Use a water bath to cook the custards evenly and prevent cracking.

- Allow the custard pots to chill in the refrigerator for at least 2 hours, so they set properly.

- Garnish with freshly whipped cream for an extra touch of decadence.

These cappuccino custard pots with almond praline provide a delightful ending to any meal. With their smooth and creamy texture contrasted by the crunchy almond praline, they offer a symphony of flavors and textures in every bite. Follow these steps, and you’ll have a dessert that not only meets but exceeds expectations.
