Instructions:

1. Cook the Beef:

- Remove the beef from the skillet and set aside.
2. Cook the Vegetables:
- In the same skillet, add the chopped red onion and minced garlic. Sauté until the onion becomes translucent.
- Add the paprika, ground cumin, and cinnamon stick. Stir to combine, cooking until fragrant.
3. Combine Ingredients:
- Return the browned beef to the skillet.
- Add the beef broth, cherry tomatoes, and diced red pepper to the skillet.
- Bring to a simmer and cook for about 15-20 minutes, stirring occasionally, until the liquid is mostly reduced and everything is well combined.
4. Assemble the Chimichangas:
- Preheat the oven to 350°F (175°C) if you prefer to bake the chimichangas instead of frying.
- Place a tortilla on a flat surface. Spoon some of the beef mixture onto the center of the tortilla.
