Instructions:

1. Preheat the Oven:

2. Prepare the Tomatoes:
- Slice the tops off the tomatoes and set them aside.
- Scoop out the insides of the tomatoes using a spoon, being careful not to puncture the skin. Set the tomato pulp aside in a bowl.
3. Cook the Couscous:
- In a medium bowl, combine the couscous with 1/4 cup boiling water. Cover the bowl and let it sit for about 5 minutes, or until the water is absorbed and the couscous is tender.
- Fluff the couscous with a fork.
4. Prepare the Filling:
- To the bowl with the couscous, add currants, chicken gravy, lemon juice, chopped almonds, basil, parsley, and chives.
- Mix everything until well combined. Add a pinch of salt and pepper to taste if desired.
5. Stuff the Tomatoes:
- Lightly drizzle the inside of each hollowed-out tomato with a bit of olive oil.
- Fill each tomato with the couscous mixture, pressing down gently to fit as much filling as possible.

- Place the reserved tops back onto the tomatoes.
- Drizzle the remaining olive oil over the tomatoes.
