Instructions:

1. Preheat the Oven:

- Slice the tops off the tomatoes and set them aside.
- Scoop out the insides of the tomatoes using a spoon, being careful not to puncture the skin. Set the tomato pulp aside in a bowl.

- In a medium bowl, combine the couscous with 1/4 cup boiling water. Cover the bowl and let it sit for about 5 minutes, or until the water is absorbed and the couscous is tender.
- Fluff the couscous with a fork.
