Ingredients:

Instructions:

1. Preheat Oven and Prepare Bulgur:
- Preheat your oven to 375°F (190°C).
- In a medium pot, bring 2 cups of water to a boil. Add the bulgur, reduce heat to low, cover, and let it simmer for about 12-15 minutes until tender. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
2. Prepare the Vegetables:
- Zucchini: Cut the zucchinis in half lengthwise. Scoop out the flesh, leaving a hollow center to create boats for stuffing, and reserve the scooped flesh.
- Tomatoes: Slice the tops off the tomatoes and scoop out the insides to create hollow bowls, reserving the scooped flesh.
- Shallots: Finely chop the shallots.
3. Cook the Lamb Filling:
- In a large skillet over medium heat, cook the lamb mince until browned, breaking it into small pieces with a wooden spoon.
- Add the chopped shallots and cook until soft and translucent, about 5 minutes.
- Add the reserved zucchini and tomato flesh into the skillet, and cook for another 5 minutes until the vegetables are softened.
- Stir in the cooked bulgur, feta cheese, chopped spearmint, lemon zest, and ground cinnamon. Mix well to combine. Season with salt and pepper to taste.
4. Stuff the Vegetables:
- Place the hollowed zucchini halves and tomatoes in a baking dish.
- Spoon the lamb mixture into the hollowed vegetables, pressing down to ensure they are well-stuffed.
5. Bake:
- Cover the baking dish with aluminum foil and bake in the oven for 25-30 minutes until the vegetables are tender.
6. Serve:
