Pistachio, Apricot & Feta Balls are a delightful and unique appetizer that combines the rich flavors of pistachios, the sweetness of dried apricots, and the tanginess of feta cheese. Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
2. Prepare Ingredients:
- Finely chop the onions.
- Coarsely chop the pistachio nuts.
- Finely chop the dried apricots.
- Crumble the feta cheese.
- Finely chop the fresh parsley.
3. Cook Onions:
In a large skillet, melt the butter over medium heat. Add the chopped onions and sauté until they are soft and translucent, about 5-7 minutes.
4. Mix Dry Ingredients:
In a large mixing bowl, combine the bread crumbs, chopped pistachios, dried apricots, crumbled feta cheese, and chopped parsley. Mix well to ensure an even distribution of ingredients.
5. Combine:
Add the sautéed onions to the bread crumb mixture. Stir in the lightly beaten eggs until the mixture is well combined and holds together when shaped.
6. Form Balls:
Using your hands, form the mixture into golf ball-sized balls (about 1-2 inches in diameter). Place the formed balls onto the prepared baking sheet.
7. Bake:
Drizzle the olive oil evenly over the balls. Bake in the preheated oven for 20-25 minutes, or until golden brown and firm to the touch.
