Beef and vegetable goulash

Beef and vegetable goulash is a hearty and flavorful dish perfect for a comforting meal. This recipe combines tender beef with a variety of fresh vegetables, creating a nutritious and delicious meal that can be enjoyed by the whole family. The use of garlic, paprika, and a blend of vegetables give this dish its rich flavors and vibrant colors.

Ingredients:

2 tbsp all-purpose white wheat flour
30g
1 tsp paprika
5g
1 lb beef
450g
1 tbsp olive oil
14g
1 short spray cooking spray oil
0.30g
1 onion
160g
1 cup mushrooms
230g
1 red pepper
80g
1 large zucchini
300g
2 garlic cloves
6g
1 cup chicken gravy
200g
1 lb tomatoes
450g

Instructions:

1. Prepare Ingredients:
- Ensure that all vegetables are cleaned and cut as directed: onions finely chopped, mushrooms sliced, red pepper sliced, zucchini sliced, garlic cloves minced, and tomatoes roughly chopped.
- Mix the all-purpose flour and paprika in a bowl.
2. Season and Coat Beef:
- In a large mixing bowl, toss the beef cubes in the flour and paprika mixture to coat them evenly.
3. Sear the Beef:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the floured beef cubes and cook until they are browned on all sides. Remove the beef from the pot and set aside.
4. Sauté Vegetables:
- In the same pot, add a short spray of cooking spray oil to prevent sticking.
- Add the chopped onion and cook for about 2 minutes, or until it becomes translucent.
- Add the sliced mushrooms, red pepper, zucchini, and minced garlic to the pot. Sauté for around 5-7 minutes until the vegetables begin to soften.
5. Combine Ingredients:
- Return the browned beef cubes back to the pot.
- Pour in the chicken gravy and add the chopped tomatoes.
6. Simmer:
- Stir everything together, ensuring the beef and vegetables are well mixed with the gravy and tomatoes.
- Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 45 minutes to 1 hour. Stir occasionally to prevent sticking.
- Cook until the beef is tender and the vegetables are fully cooked.
7. Serve:
- Taste and adjust seasoning if necessary.
- Serve the goulash hot, on its own or over rice, pasta, or with crusty bread.

Tips:

- Cut the beef into even, bite-sized pieces to ensure it cooks evenly and absorbs the flavors better.

- Sauté the onion and garlic first to bring out their natural sweetness before adding the other vegetables.

- Use fresh paprika if possible, as it can make a significant difference in the overall flavor of the dish.

- Add the zucchini towards the end of the cooking process to prevent it from becoming too mushy.

- If you prefer a thicker goulash, let the sauce simmer a little longer to reduce and thicken.

- Consider adding a splash of red wine for an extra depth of flavor.

- Serve the goulash with a side of crusty bread or over a bed of egg noodles for a complete meal.

This beef and vegetable goulash is a versatile and hearty dish that is sure to satisfy both meat and vegetable lovers alike. With its rich flavors and wholesome ingredients, it makes for a perfect weeknight dinner or a cozy meal on a cold day. Enjoy your homemade goulash with a side of crusty bread or over a bed of egg noodles for a complete and satisfying meal.
