Instructions:

1. Prepare Ingredients:
- Ensure that all vegetables are cleaned and cut as directed: onions finely chopped, mushrooms sliced, red pepper sliced, zucchini sliced, garlic cloves minced, and tomatoes roughly chopped.
- Mix the all-purpose flour and paprika in a bowl.
2. Season and Coat Beef:
- In a large mixing bowl, toss the beef cubes in the flour and paprika mixture to coat them evenly.
3. Sear the Beef:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the floured beef cubes and cook until they are browned on all sides. Remove the beef from the pot and set aside.
4. Sauté Vegetables:
- In the same pot, add a short spray of cooking spray oil to prevent sticking.
- Add the chopped onion and cook for about 2 minutes, or until it becomes translucent.
- Add the sliced mushrooms, red pepper, zucchini, and minced garlic to the pot. Sauté for around 5-7 minutes until the vegetables begin to soften.
5. Combine Ingredients:
- Return the browned beef cubes back to the pot.
- Pour in the chicken gravy and add the chopped tomatoes.
6. Simmer:
- Stir everything together, ensuring the beef and vegetables are well mixed with the gravy and tomatoes.
- Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 45 minutes to 1 hour. Stir occasionally to prevent sticking.
