Ingredients:

6 chicken thighs

230g
1 red onion
160g
1 cup cherry tomatoes
180g
2 garlic cloves
6g
1 red pepper
80g
1 carrot
60g
1/2 cup white wine
120g
1 cup chicken gravy
200g
1/3 cup olives
72g

Instructions:

1. Prepare the Ingredients:
- Slice the mushrooms.
- Chop the red onion.
- Halve the cherry tomatoes.
- Mince the garlic cloves.
- Slice the red pepper and carrot.
2. Sear the Chicken:
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
- Season the chicken thighs with salt and pepper.
- Add the chicken thighs to the skillet and sear on each side until golden brown (about 5 minutes per side). Remove chicken from the skillet and set aside.
3. Cook the Vegetables:
- In the same skillet, add the remaining 1 tbsp of olive oil.
- Add the sliced mushrooms and cook until softened (about 3-4 minutes).
- Add the chopped red onion, minced garlic, sliced red pepper, and sliced carrot. Sauté until the vegetables start to soften (about 5 minutes).
4. Deglaze the Pan:
- Pour in the white wine and stir, scraping up any browned bits from the bottom of the skillet.
- Let the wine simmer and reduce slightly (about 2 minutes).
5. Combine Ingredients:
- Return the seared chicken thighs to the skillet.
- Add the halved cherry tomatoes and chicken gravy to the skillet.
- Stir to combine and make sure the chicken is well-coated with the sauce.
6. Simmer:
- Reduce the heat to low, cover the skillet, and let it simmer for about 25-30 minutes, or until the chicken is cooked through and tender.
7. Add Olives:
- Stir in the olives and let the mixture cook for an additional 5 minutes.
8. Serve:
- Serve the Chicken Cacciatore hot, garnished with fresh herbs if desired. It pairs well with pasta, rice, or crusty bread.

Tips:

- For an even richer flavor, marinate the chicken thighs in herbal spices and olive oil for a few hours before cooking.

- If you prefer a spicier dish, consider adding some crushed red pepper flakes or a pinch of cayenne pepper.

- Using a mix of different mushrooms can add more depth to the flavor profile.

- For a thicker sauce, let the chicken cacciatore simmer uncovered for the last 10-15 minutes of cooking.

- Garnish with freshly chopped parsley or basil to add a fresh aroma and vibrant color to the dish.

Your Chicken Cacciatore is now ready to be served! This rustic Italian dish is best enjoyed with a side of crusty bread or over a bed of pasta, allowing you to soak up every last bit of the flavorful sauce. Buon appetito!
