Instructions:

2. Sear the Chicken:
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat.

3. Cook the Vegetables:
- In the same skillet, add the remaining 1 tbsp of olive oil.

- Add the chopped red onion, minced garlic, sliced red pepper, and sliced carrot. Sauté until the vegetables start to soften (about 5 minutes).
4. Deglaze the Pan:
- Pour in the white wine and stir, scraping up any browned bits from the bottom of the skillet.
- Let the wine simmer and reduce slightly (about 2 minutes).
5. Combine Ingredients:
- Return the seared chicken thighs to the skillet.
- Add the halved cherry tomatoes and chicken gravy to the skillet.
- Stir to combine and make sure the chicken is well-coated with the sauce.
6. Simmer:
- Reduce the heat to low, cover the skillet, and let it simmer for about 25-30 minutes, or until the chicken is cooked through and tender.
7. Add Olives:
- Stir in the olives and let the mixture cook for an additional 5 minutes.
8. Serve:
