Instructions:

1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
2. Prepare the Vegetables:
Finely chop the onion, carrot, and celery. Mince the garlic cloves.
3. Cook the Vegetables:
Heat the olive oil in a large skillet over medium heat. Add the onion, carrot, celery, and thyme. Cook until the vegetables are soft, about 5-7 minutes. Stir in the minced garlic and cook for another minute.
4. Cook the Ground Beef:
Add the ground beef to the skillet with the vegetables. Break it up with a spoon and cook until browned, about 8-10 minutes.
5. Prepare the Sauce:
Stir in the tomato puree and canned tomatoes. Pour in the beef broth and bring the mixture to a simmer. Let it cook gently for 15-20 minutes to allow the flavors to meld and the sauce to thicken.
6. Cook the Rice:
While the sauce is simmering, cook the white rice according to the package instructions if it's not already cooked.
7. Combine Mixture:
In a large mixing bowl, combine the cooked rice and the bolognese sauce. Stir in the beaten eggs, chopped parsley, and half of the grated parmesan cheese.
8. Bake the Dish:
Transfer the mixture to a greased baking dish. Spread it out evenly. Sprinkle the remaining grated parmesan cheese over the top.
