Ingredients:

Instructions:

1. Prepare Ingredients:
- Chop the onion and garlic.
- Peel and cut the carrots into large chunks.
- Cube the beef into bite-sized pieces if not already cut.
2. Sear the Beef:
- Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.
- Once the oil is hot, add the beef cubes and sear all sides until browned. This should take about 5-7 minutes.
- Remove the beef from the pot and set aside.
3. Sauté Aromatics:
- In the same pot, add the remaining 1 tablespoon of olive oil.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and chopped rosemary, and sauté for another 1-2 minutes until fragrant.
4. Deglaze the Pot:
- Pour in the vinegar and use a wooden spoon to scrape up any brown bits from the bottom of the pot. This will add depth to the flavor.
5. Combine Ingredients:
- Return the seared beef to the pot.
- Pour in the beef broth and water.
- Bring the mixture to a boil, then reduce the heat to low.
6. Simmer:
- Cover the pot partially with a lid, leaving a small gap for steam to escape.
- Let the beef simmer for about 1 hour, stirring occasionally.
7. Add Carrots:
- After an hour, add the chopped carrots to the pot.
- Continue to simmer for another 30-45 minutes, or until the beef is tender and the carrots are cooked through.
8. Season and Serve:
- Taste and adjust seasoning as needed with salt and pepper.
- Serve the braised beef hot, either on its own or over mashed potatoes, rice, or with crusty bread.
