Instructions:

1. Preheat Oven: Preheat your oven to 375°F (190°C).

3. Make the Cheese Sauce:
- In a medium saucepan, melt the butter over medium heat.
- Once the butter is melted, add the flour and whisk continuously to form a roux. Cook for about 1-2 minutes to remove the raw flour taste, but do not let it brown.
- Gradually add the milk, whisking constantly to create a smooth sauce. Bring the mixture to a simmer and cook until the sauce has thickened, about 5-7 minutes.
- Stir in the grated parmesan cheese, fresh thyme, and black pepper. Mix well until the cheese has fully melted and the sauce is smooth.
4. Combine Cauliflower and Sauce:
- Place the cooked cauliflower florets in a large baking dish.
- Pour the cheese sauce over the cauliflower, ensuring all florets are well coated.
5. Top with Cheddar:
- Sprinkle the grated cheddar cheese evenly over the top of the cauliflower and sauce mixture.
6. Bake:
- Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and the sauce is bubbly.
