2 tbsp olive oil

2. Cook the Cauliflower and Onion:
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5-7 minutes.
- Add the chopped cauliflower florets to the pot and stir well to coat with the oil and onion mixture.
3. Simmer the Soup:
- Add enough water to the pot to just cover the cauliflower (about 4-5 cups).
- Bring to a boil, then reduce the heat and simmer until the cauliflower is tender, about 20 minutes.
4. Blend the Soup:
