Ingredients:

1 cauliflower
900g
2 tbsp olive oil
27g
1 onion
160g
1 cup grated parmesan cheese
80g
1 tbsp fresh parsley
5g
2 tbsp lemon zest
30g

Instructions:

1. Prepare the Ingredients:
- Cauliflower: Remove leaves and tough stems, then chop the cauliflower into florets.
- Onion: Peel and finely chop the onion.
- Parmesan Cheese: Grate the parmesan cheese if not pre-grated.
- Parsley & Lemon Zest: Finely chop the parsley and zest the lemon.
2. Cook the Cauliflower and Onion:
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5-7 minutes.
- Add the chopped cauliflower florets to the pot and stir well to coat with the oil and onion mixture.
3. Simmer the Soup:
- Add enough water to the pot to just cover the cauliflower (about 4-5 cups).
- Bring to a boil, then reduce the heat and simmer until the cauliflower is tender, about 20 minutes.
4. Blend the Soup:
- Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth. Be careful with hot liquids!
- Return the soup to the pot if using a blender.
5. Season:
- Season with salt and pepper to taste.
- Stir in the lemon zest and fresh parsley.
6. Prepare Parmesan Crumbs:
- In a small skillet over medium heat, add 1-2 tablespoons more of olive oil.
- Add the grated parmesan cheese to the skillet and stir constantly until the cheese is golden and forms crumbs, about 3-4 minutes. Be careful not to burn the cheese.
7. Serve:
- Ladle the hot cauliflower soup into bowls.
- Garnish each serving with a generous sprinkle of parmesan crumbs.
8. Enjoy!
- Serve immediately and enjoy this warm, comforting, and flavorful soup.

Tips:

- Ensure the cauliflower is fresh and free of blemishes for the best flavor and texture.

- For a smoother consistency, use a blender to puree the soup until it reaches your desired texture.

- Toast the parmesan crumbs until they are golden and crispy to add a delightful crunch to your soup.

- Add lemon zest gradually and taste along the way to make sure the citrus flavor is balanced and not overwhelming.

- Garnish with fresh parsley just before serving to preserve its vibrant color and fresh flavor.

With its rich flavors and satisfying texture, cauliflower soup with parmesan crumbs is a fantastic addition to your recipe collection. It's easy to prepare and a hit with both children and adults alike. Serve it with a side of crusty bread to fully enjoy the delightful creaminess of the soup and the crunch of the parmesan crumbs.
