- Cook the tomatoes until they are softened and most of the liquid has evaporated, about 5-7 minutes.
3. Add Spinach:
- Add the chopped spinach to the pan with the tomatoes.
- Cook for another 2-3 minutes until the spinach is wilted. Stir occasionally.
- Remove the tomatoes and spinach from the pan and set them aside in a bowl.
4. Cook the Eggs:
- Reduce the heat to medium-low. If needed, add a little more butter or oil to the pan to prevent sticking.
- Pour the beaten eggs into the pan, making sure they spread out evenly. Let the eggs cook undisturbed for about 2-3 minutes, or until the edges start to set.
