- In a large non-stick frying pan, melt the butter over medium heat.
- Once the butter has melted and is starting to bubble, add the diced tomatoes.
- Cook the tomatoes until they are softened and most of the liquid has evaporated, about 5-7 minutes.
3. Add Spinach:
- Add the chopped spinach to the pan with the tomatoes.
- Cook for another 2-3 minutes until the spinach is wilted. Stir occasionally.
- Remove the tomatoes and spinach from the pan and set them aside in a bowl.
4. Cook the Eggs:
- Reduce the heat to medium-low. If needed, add a little more butter or oil to the pan to prevent sticking.
- Pour the beaten eggs into the pan, making sure they spread out evenly. Let the eggs cook undisturbed for about 2-3 minutes, or until the edges start to set.
- Using a spatula, gently lift the edges of the omelette and tilt the pan to let any uncooked egg flow to the edges.
- Cook for another 2-3 minutes until almost set but still slightly runny on top.
5. Assemble the Omelette:
- Spoon the spinach and tomato mixture evenly over one half of the omelette.
- Sprinkle the grated parmesan cheese on top of the spinach and tomato mixture.

- Carefully fold the empty half of the omelette over the filling side using a spatula, forming a half-moon shape.
