Instructions:

1. Prepare the Tart Crust:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the all-purpose flour and a dash of salt.
- Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingers, rub the butter into the flour until the mixture resembles coarse crumbs.
- Add the egg yolk and 1-2 tablespoons of cold water to the flour-butter mixture, just enough to bring the dough together.
- Knead the dough lightly and form it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
2. Prepare the Filling:
- While the dough is chilling, wash and halve the cherry tomatoes.
- Heat a skillet over medium heat. Add the olive oil and cherry tomatoes. Sauté for about 5-7 minutes until they start to soften. Season with a dash of salt.
- Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a medium bowl, mix the light sour cream, grated parmesan cheese, basil, and parsley.
3. Assemble the Quiche:
