Instructions:

1. Prep Ingredients:
- Slice the chicken breasts into thin strips.
- Thinly slice the onion and mince the garlic.
- Juice the lemons and set the juice aside.
2. Soak Rice Noodles:
- Place the rice noodles in a large bowl and cover them with hot water. Allow them to soak for about 10-15 minutes or until they are tender but still slightly firm. Drain and set aside.
3. Cook Chicken:
- Heat 1/3 of the olive oil in a large skillet or wok over medium-high heat.
- Add the chicken strips and cook for 5-7 minutes, stirring frequently, until they are browned and cooked through. Remove chicken from the skillet and set aside.
4. Sauté Aromatics:
- In the same skillet, add another 1/3 of the olive oil.
- Add the sliced onion and minced garlic. Cook for 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
5. Make the Sauce:
- Add the curry paste, sugar, fish sauce, and lemon juice to the skillet.
- Stir well to combine and cook for 1-2 minutes until the mixture is well blended and slightly thickened.
6. Cook the Egg:
- Push the vegetables to one side of the skillet. Add the remaining olive oil to the empty side.
- Crack the egg into the skillet and scramble it, stirring constantly, until fully cooked. Then, mix it with the vegetables.
7. Combine Everything:
- Add the cooked chicken back into the skillet, along with the drained rice noodles.
- Toss everything together until the noodles are well coated with the sauce and all ingredients are evenly distributed.
8. Add Spinach and Peanuts:
- Add the spinach and peanuts to the skillet.
- Stir for an additional 1-2 minutes until the spinach is wilted and everything is well mixed.
