Chicken lo mein

Chicken Lo Mein is a delightful Chinese-inspired dish that combines tender chicken with a colorful medley of vegetables and savory egg noodles. This recipe is perfect for a quick and flavorful weeknight dinner that satisfies the whole family.

Instructions:

1. Prepare Chicken:
- In a medium bowl, mix 1 tablespoon of olive oil, 2 tablespoons of soy sauce, 2 teaspoons of sugar, 1 teaspoon of sesame oil, and 1/2 teaspoon of grated ginger.
- Add the cut chicken thighs to the bowl and marinate for at least 15 minutes.
2. Cook Noodles:
- Cook the egg noodles according to the package instructions. Drain and set aside.
3. Cook Chicken:
- Heat a large skillet or wok over medium-high heat and add the marinated chicken.
- Stir-fry the chicken until it’s fully cooked and browned (about 5-7 minutes).
- Remove the chicken from the skillet and set it aside.
4. Stir-Fry Vegetables:
- In the same skillet, add 1 tablespoon of olive oil.
- Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Add the sliced mushrooms, julienned red pepper, and julienned carrot. Stir-fry for about 4-5 minutes until vegetables are tender but still crisp.
- Add the peas and spinach. Continue stir-frying until they are heated through and the spinach has wilted.
5. Combine Ingredients:
- Return the cooked chicken to the skillet with the vegetables.
- Add the cooked egg noodles and drizzle with 1/2 teaspoon of pepper sauce. Toss everything together until well combined and heated through.
6. Serve:
- Taste and adjust seasoning if necessary. Serve hot and enjoy your Chicken Lo Mein!

Tips:

- Ensure the chicken thighs are cooked thoroughly, reaching an internal temperature of 165°F (74°C).

- Slice the vegetables uniformly for even cooking and a pleasant presentation.

- Use low-sodium soy sauce to control the saltiness of the dish.

- Don't overcook the noodles; they should be tender yet firm (al dente) to prevent them from becoming mushy.

- Toast the sesame oil slightly before adding it to enhance its nutty flavor.

- Feel free to substitute vegetables based on your preference or seasonal availability.

- Marinate the chicken in the soy sauce mixture for at least 30 minutes for a deeper flavor.

Your Chicken Lo Mein is now ready to be served. Enjoy the rich blend of flavors and textures in this comforting and nutritious dish. Whether it's a casual family dinner or a special occasion, this Chicken Lo Mein is sure to please.
