Ingredients:

Instructions:

1. Prepare the Vegetables:
- Peel and finely dice the onion.
- Peel and grate the carrot.
2. Mix the Meatballs:
- In a large bowl, combine the ground beef, diced onion, and grated carrot.
- Add 2 tablespoons of all-purpose flour, 1 tablespoon of tomato sauce, and 1 tablespoon of BBQ sauce.
- Mix all ingredients thoroughly until well combined. This mixture will form the meatball 'meteors'.
3. Form the Meatballs:
- Using your hands, shape the mixture into small meatballs, approximately 1 inch in diameter.
- Place the meatballs on a plate or a tray.
4. Cook the Meatballs:
- Heat 2 teaspoons of olive oil in a large skillet over medium heat.
- Once the oil is hot, add the meatballs to the skillet in a single layer. You may need to cook them in batches if your skillet is small.
- Cook the meatballs for about 10 minutes, turning occasionally, until they are browned on all sides and cooked through.
- Once cooked, remove the meatballs from the skillet and set them aside on a plate.
5. Prepare the Sauce:
- In the same skillet, add the canned tomatoes (including the juice) and 1 teaspoon of sugar.
- Stir to combine and bring the mixture to a simmer.
- Let the sauce cook for about 5-7 minutes, stirring occasionally, until it thickens slightly.
6. Combine Meatballs with Sauce:
- Return the cooked meatballs to the skillet with the tomato sauce.
- Stir gently to coat the meatballs with the sauce.
- Continue to simmer for an additional 5 minutes, allowing the meatballs to absorb some of the sauce flavors.
7. Garnish and Serve:
- Remove the skillet from the heat.
- Sprinkle the meatballs with finely chopped fresh parsley for a burst of flavor and color.
