Meatball meteors

Meatball Meteors are a fun and savory dish that will surely be a hit at your dinner table. Combining juicy ground beef with a blend of vegetables and sauces, these meatballs are simmered in a rich tomato sauce that's perfect for any pasta or a stand-alone dish. Follow this simple recipe to create a delicious meal that packs a flavorful punch.

Ingredients:

14 oz ground beef (80/20%)
400g
1 onion
110g
1 carrot
60g
2 tbsp all-purpose white wheat flour
30g
1 tbsp tomato sauce
16g
1 tbsp BBQ sauce
16g
2 tsp olive oil
9g
1 can canned tomatoes
400g
1 tsp sugar
5g
1 tbsp fresh parsley
5g

Instructions:

1. Prepare the Vegetables:
- Peel and finely dice the onion.
- Peel and grate the carrot.
2. Mix the Meatballs:
- In a large bowl, combine the ground beef, diced onion, and grated carrot.
- Add 2 tablespoons of all-purpose flour, 1 tablespoon of tomato sauce, and 1 tablespoon of BBQ sauce.
- Mix all ingredients thoroughly until well combined. This mixture will form the meatball 'meteors'.
3. Form the Meatballs:
- Using your hands, shape the mixture into small meatballs, approximately 1 inch in diameter.
- Place the meatballs on a plate or a tray.
4. Cook the Meatballs:
- Heat 2 teaspoons of olive oil in a large skillet over medium heat.
- Once the oil is hot, add the meatballs to the skillet in a single layer. You may need to cook them in batches if your skillet is small.
- Cook the meatballs for about 10 minutes, turning occasionally, until they are browned on all sides and cooked through.
- Once cooked, remove the meatballs from the skillet and set them aside on a plate.
5. Prepare the Sauce:
- In the same skillet, add the canned tomatoes (including the juice) and 1 teaspoon of sugar.
- Stir to combine and bring the mixture to a simmer.
- Let the sauce cook for about 5-7 minutes, stirring occasionally, until it thickens slightly.
6. Combine Meatballs with Sauce:
- Return the cooked meatballs to the skillet with the tomato sauce.
- Stir gently to coat the meatballs with the sauce.
- Continue to simmer for an additional 5 minutes, allowing the meatballs to absorb some of the sauce flavors.
7. Garnish and Serve:
- Remove the skillet from the heat.
- Sprinkle the meatballs with finely chopped fresh parsley for a burst of flavor and color.
- Serve the meatball meteors hot, over pasta, rice, or as an appetizer. Enjoy!

Tips:

- For a finer texture, finely grate the carrot and mince the onion before mixing with the ground beef.

- Chill the meat mixture for about 30 minutes in the refrigerator before forming into meatballs. This helps them hold their shape better during cooking.

- If you prefer a slightly spicy flavor, add a pinch of chili flakes to the meatball mixture.

- Serve the meatballs over spaghetti or with a side of crusty bread to soak up the delicious sauce.

With these Meatball Meteors, you have a versatile and tasty meal that's perfect for any occasion. The combination of savory beef, vegetables, and a rich tomato sauce creates an irresistible dish that's sure to please. Enjoy these meatballs on their own or as a part of a hearty pasta meal.
