3. Prepare Pork Fillets:
- While the sweet potatoes are roasting, heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.
- Season the pork fillets with the remaining ½ teaspoon of salt.
4. Cook Pork Fillets:
- Sear the pork fillets in the hot skillet for about 3-4 minutes on each side, until they are browned all over.
5. Add Aromatics:

- Pour in the white wine and beef broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

- While the pork is finishing in the oven, bring a pot of water to a boil. Blanch the green beans by boiling for 2-3 minutes, then transfer immediately to a bowl of ice water to stop the cooking process. Drain and set aside.
