Ingredients:

Instructions:

- Mince the 2 garlic cloves and add them to the bowl.
- Add the 2 tablespoons of dried oregano.
- Mix well to combine all the dressing ingredients.
2. Prepare the Vegetables:
- Rinse the cherry tomatoes and cut them in half.
- Peel and slice the cucumber into thin rounds or half-moons, depending on your preference.
- Peel the onion and slice it thinly. If desired, soak the onion slices in cold water for about 10 minutes to mellow the strong flavor.
- Core the red pepper, removing any seeds, and slice it into thin strips.
3. Combine the Salad:
- In a large salad bowl, combine the halved cherry tomatoes, cucumber slices, sliced onion, and red pepper strips.
- Add the 1/2 cup of olives. You can use Kalamata or your favorite type of olives.
4. Add the Dressing:
- Pour the prepared dressing over the mixed vegetables.
- Toss gently to ensure all the vegetables are evenly coated with the dressing.
5. Add the Cheese:
