4. Deglaze with Wine:
- Pour in the white wine. Stir frequently until the wine is mostly absorbed by the rice, about 1-2 minutes.
5. Cook the Risotto:
- Begin adding the warm chicken gravy, one ladleful (approximately 1/2 cup) at a time, to the rice.
- Stir constantly and allow each addition of gravy to be almost completely absorbed before adding the next ladleful.
- Continue this process, adding the gravy gradually and stirring constantly, until the rice is creamy and cooked through but still slightly al dente, about 18-20 minutes.
6. Add the Scallions:
- In the last 5 minutes of cooking, stir in the thinly sliced scallions.
- Continue to cook and stir until the scallions are tender and the risotto has reached your desired consistency.
7. Finish and Serve:
- Taste the risotto and adjust seasoning with salt and pepper if needed.
- Serve the risotto immediately, garnishing with extra scallions if desired.
