Classic italian risotto

Risotto is a classic Italian dish that delivers a creamy, luxurious texture with each bite. This recipe for a classic Italian risotto uses simple yet flavorful ingredients, turning typical pantry staples into a comforting and elegant meal. Whether you’re cooking for a special occasion or simply craving a hearty dish, this risotto is sure to impress.

Ingredients:

4 cups chicken gravy
800g
1 tbsp olive oil
14g
1 onion
160g
2 garlic cloves
6g
1 cup white rice
230g
1/2 cup white wine
120g
1 cup scallions
50g

Instructions:

1. Prepare the Chicken Gravy:
- In a medium saucepan, heat the chicken gravy over low heat. You want to keep it warm but not boiling.
2. Sauté the Aromatics:
- In a large skillet or wide saucepan, heat the olive oil over medium heat.
- Add the finely chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook until fragrant, about 1 minute.
3. Toast the Rice:
- Add the white rice to the skillet with the onion and garlic. Stir well to coat the rice with the oil.
- Cook for about 2-3 minutes, stirring frequently, until the rice grains are lightly toasted and start to turn translucent around the edges.
4. Deglaze with Wine:
- Pour in the white wine. Stir frequently until the wine is mostly absorbed by the rice, about 1-2 minutes.
5. Cook the Risotto:
- Begin adding the warm chicken gravy, one ladleful (approximately 1/2 cup) at a time, to the rice.
- Stir constantly and allow each addition of gravy to be almost completely absorbed before adding the next ladleful.
- Continue this process, adding the gravy gradually and stirring constantly, until the rice is creamy and cooked through but still slightly al dente, about 18-20 minutes.
6. Add the Scallions:
- In the last 5 minutes of cooking, stir in the thinly sliced scallions.
- Continue to cook and stir until the scallions are tender and the risotto has reached your desired consistency.
7. Finish and Serve:
- Taste the risotto and adjust seasoning with salt and pepper if needed.
- Serve the risotto immediately, garnishing with extra scallions if desired.

Tips:

- Use a good quality chicken gravy for the best flavor; homemade is preferable but good quality store-bought works as well.

- Patience is key! Stirring the rice constantly helps release its starch, creating that rich, creamy texture risotto is known for.

- Always use room temperature white wine to avoid shocking the rice and slowing down the cooking process.

- For extra depth of flavor, consider toasting the rice lightly in olive oil before adding the wine.

- Adjust the seasoning towards the end of cooking, as the flavors will concentrate and there is a risk of over-salting.

This classic Italian risotto, made with a perfect blend of chicken gravy, white wine, and fresh scallions, promises a delightful and satisfying meal. Mastering the technique of making risotto opens up endless possibilities for variations. Enjoy your creamy, flavorful creation as a testament to the timeless elegance of Italian cuisine. Buon appetito!
