Ingredients:

2 eggs
100g
1.25 cups milk (1% fat)
300g
1 tsp vanilla extract
4g
3 cups all-purpose white wheat flour
380g
1 tsp baking powder
5g
2 tsp cinnamon
6g
1 cup sugar
200g
1 cup coconut meat
150g
1/3 cup butter
70g

Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
2. Prepare Wet Ingredients:
In a large mixing bowl, beat 2 eggs until they are light and frothy. Add 1.25 cups of milk and 1 tsp of vanilla extract to the eggs. Mix until well combined.
3. Prepare Dry Ingredients:
In a separate bowl, combine 3 cups of all-purpose white wheat flour, 1 tsp of baking powder, and 2 tsp of cinnamon. Stir in 1 cup of sugar until evenly distributed.
4. Combine Ingredients:
Gradually add the dry ingredients to the wet ingredients, stirring gently until the mixture is just combined. Do not overmix to keep the bread tender.
5. Add Coconut and Butter:
Fold in 1 cup of coconut meat. Melt 1/3 cup of butter and let it cool slightly before adding it to the batter. Mix until the coconut and butter are evenly distributed throughout the batter.
6. Transfer to Pan:
Pour the batter into the prepared loaf pan, spreading it evenly.
7. Bake:
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly firm to the touch.
8. Cool:
Allow the bread to cool in the pan for about 10 minutes. Then, remove it from the pan and place it on a wire rack to cool completely.
9. Serve:
Slice and serve the coconut bread as is, or with a touch of butter or jam. Enjoy!

Tips:

- Make sure to preheat your oven to the recommended temperature to ensure even baking.

- Use room temperature eggs and butter for a smoother batter.

- Do not overmix the batter; overmixing can result in a dense bread.

- Adding a sprinkle of shredded coconut on top before baking can add a nice texture and enhance the coconut flavor.

- Allow the bread to cool completely before slicing to avoid it falling apart.

Coconut bread is a versatile and delicious option that can be enjoyed any time of the day. Its rich, tropical flavor and moist texture make it a favorite for both family gatherings and quiet mornings at home. Enjoy it fresh out of the oven or toasted with a bit of butter or jam.
