- Once cooled, drain the shrimps thoroughly and set aside.
2. Prepare the Sauce:
- In a medium bowl, combine the mayonnaise and lime juice. Mix well until smooth and creamy.
- Add the finely chopped coriander leaves and red hot chili peppers to the mayonnaise mixture. Stir to incorporate everything evenly.
3. Assemble the Cocktail:
- In a large serving bowl or a few individual serving glasses, divide the chopped spinach evenly.
- Arrange the cooked shrimps on top of the spinach.
- Spoon the coriander and chili mayonnaise sauce over the shrimps, ensuring they are coated nicely.
