Instructions:

1. Heat Oil: In a large pot, heat the olive oil over medium heat.
2. Cook Chicken: Add the diced chicken breasts to the pot, seasoning lightly with salt and pepper. Cook until the chicken is browned and no longer pink in the center, about 5-7 minutes. Remove the chicken from the pot and set aside.
3. Sauté Vegetables: In the same pot, add the chopped onions and sliced carrots. Sauté for about 5 minutes, or until the onions are translucent and the carrots are beginning to soften.
4. Add Garlic: Add the minced garlic to the pot and sauté for another minute until fragrant.
5. Add Mushrooms: Stir in the sliced mushrooms, and cook until they begin to soften, approximately another 4-5 minutes.
6. Prepare Broth: Dissolve the chicken broth cubes in 4 cups of warm water, then pour the broth into the pot. Add the fresh thyme.
7. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the vegetables are tender.
8. Add Chicken and Season: Return the cooked chicken to the pot. Stir in the Greek yogurt until fully incorporated and the soup becomes creamy. Add the lemon juice, and adjust seasoning with salt and pepper to taste.
9. Serve: Ladle the hot soup into bowls and serve immediately. Garnish with additional fresh thyme if desired.
