6 cobs sweet corn

6 strips bacon

1/2 red pepper

Instructions:

1. Prepare the Corn:
- Remove the husks and silk from the sweet corn cobs.
- Using a sharp knife, carefully cut the kernels off the cobs. Place them in a large mixing bowl.
2. Cook the Bacon:
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and drain on paper towels. Keep a bit of the bacon grease for frying the fritters if desired.
3. Prep the Vegetables:
- Finely chop the red pepper and add it to the bowl with the corn kernels.
- Add the cooked bacon to the bowl as well.
4. Make the Batter (Optional):
- In a separate bowl, whisk together the flour, eggs, milk, salt, and black pepper until smooth.
- Pour the batter over the corn, red pepper, and bacon mixture. Stir in the chopped chives or scallions if using.
5. Cook the Fritters:
- Heat a thin layer of olive oil or vegetable oil (or reserved bacon grease) in a large skillet over medium heat.
- For each fritter, spoon about 2 tablespoons of the mixture into the hot skillet, pressing down lightly with the back of the spoon to flatten.
- Cook for 2-3 minutes on each side, or until golden brown and crispy. Fry the fritters in batches, avoiding overcrowding the skillet.
6. Serve:
- Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
