- Trim the ends off the green beans and rinse them thoroughly under cold water.
2. Blanch the Green Beans:
- Bring a pot of salted water to a boil.
- Add the green beans and cook for about 3-4 minutes, until they are bright green and just tender.
- Immediately drain and transfer the green beans to a bowl of ice water to stop the cooking process. Once cool, drain the beans and set them aside.
3. Toast the Pine Nuts:
- Place a dry skillet over medium heat.
- Add the pine nuts and toast them, stirring frequently, until they are golden brown and fragrant. Be careful not to let them burn. This should take about 2-3 minutes. Remove the pine nuts from the skillet and set aside.
4. Cook the Garlic and Tomato:
- In the same skillet, add 1 tablespoon of olive oil and heat over medium heat.
- Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the diced tomato and cook for another 2-3 minutes, until the tomato is soft and has released some juice.
5. Combine and Season:
- Add the blanched green beans to the skillet with the garlic and tomato. Toss to combine and heat the beans through, approximately 2-3 minutes.
- Add 1 teaspoon of lemon juice and a dash of salt. Stir to evenly distribute the seasoning.
