- Spread the butter mixture evenly under the loosened skin of the chicken, spreading some on top of the skin as well.
4. Season the Chicken:
- Sprinkle the inside of the chicken cavity with salt and pepper.
- Place the squeezed lime halves and a few onion quarters inside the cavity for added flavor.
5. Prepare Vegetables:
- In a large roasting pan, toss the pumpkin cubes and remaining red onion quarters with a tablespoon of olive oil, salt, and pepper.
- Spread the vegetables evenly across the bottom of the pan.
6. Roast the Chicken:
- Place the prepared chicken on top of the vegetables in the roasting pan.
- Pour the remaining lime juice over the chicken.
7. Roasting Time:
- Roast the chicken in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear when the thickest part of the thigh is pierced.
- If the chicken skin starts to brown too quickly, loosely cover the chicken with aluminum foil.
