Instructions:

1. Prepare the Ingredients:
- Begin by preheating your barbecue grill to medium heat.
- Toast the pine nuts in a dry pan over medium heat until golden brown, stirring frequently. Set aside to cool.
- Finely chop the onion and parsley.
- Drain and chop the capers.
2. Mix the Ingredients:
- In a large bowl, flake the white fish using a fork.
- Add the chopped parsley, toasted pine nuts, finely chopped onion, bread crumbs, grated Parmesan cheese, beaten egg, and chopped capers to the bowl with the fish.
- Use your hands or a spoon to mix everything together until well combined.
3. Form the Patties:
- Divide the mixture into equal portions and shape each portion into a patty, about 1/2 inch thick. You should get 4-6 patties depending on the size.
4. Prepare the Grill:
- Lightly spray the cooking spray oil on the barbecue grill racks to prevent the patties from sticking.
- Carefully place the fish patties onto the grill.
5. Cook the Patties:
- Grill the patties for about 5-7 minutes on each side, or until the patties are opaque throughout and have nice grill marks. The internal temperature should reach 145°F (63°C).
