Instructions:

1. Prep the Vegetables:
- Cut the cauliflower into small florets and trim the green beans. Set aside.
2. Make the Meatballs:
- In a large mixing bowl, combine the ground beef, egg, finely chopped shallots, minced garlic, allspice, and ground nutmeg. Mix until all ingredients are well incorporated.
- Form the mixture into small meatballs, approximately 1 inch in diameter.
3. Cook the Meatballs:
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Once the oil is hot, add the meatballs in batches, making sure not to overcrowd the pan. Cook the meatballs for about 5-7 minutes on each side, or until they are browned and cooked through. Transfer the cooked meatballs to a plate and set aside.
4. Prepare the Gravy:
- In the same skillet, add the beef broth, mustard, and light sour cream. Stir well to combine with the residual juices from the meatballs.
- Let the gravy simmer for about 5 minutes, stirring occasionally, until it thickens slightly. If it becomes too thick, you can add a bit more beef broth to reach your desired consistency.
5. Steam the Vegetables:
- While the gravy is simmering, steam the cauliflower florets and green beans until tender. This usually takes about 7-10 minutes for the cauliflower and 4-6 minutes for the green beans. You can steam them together or separately depending on your preference and available equipment.
6. Combine and Serve:
- Once the gravy has thickened, return the meatballs to the skillet. Gently stir them into the gravy to coat them evenly.
