Ingredients:

2 tsp butter
10g
3 eggs
150g
1/3 cup sugar
63g
1.25 cups milk (1% fat)
300g
1/2 cup self-raising flour
72g
1 tbsp lime zest
16g
2 tbsp lemon zest
30g
1/3 cup lime juice
72g
1/4 cup lemon juice
50g

Instructions:

1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Baking Dish:
- Grease a baking dish with the 2 tsp of butter to prevent sticking. Set aside.
3. Separate the Eggs:
- Separate the egg yolks from the whites. Place the yolks in a large mixing bowl and the whites in another clean, dry bowl.
4. Mix the Egg Yolks and Sugar:
- Add the 1/3 cup of sugar to the egg yolks and whisk until the mixture becomes pale and fluffy.
5. Combine Wet Ingredients:
- Gradually add the milk, 1/3 cup lime juice, and 1/4 cup lemon juice to the egg yolk mixture, whisking continuously until well combined.
6. Add the Zests:
- Stir in the 1 tbsp of lime zest and 2 tbsp of lemon zest into the mixture.
7. Incorporate the Dry Ingredients:
- Sift the 1/2 cup of self-raising flour into the wet mixture, folding it in gently until there are no lumps.
8. Whip the Egg Whites:
- Using a clean whisk or mixer, beat the egg whites until they form stiff peaks.
9. Fold in Egg Whites:
- Gently fold the beaten egg whites into the batter in three parts. Be careful not to deflate the mixture.
10. Pour into Baking Dish:
- Pour the batter into the prepared baking dish, spreading it out evenly.
11. Bake:
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the sponge springs back when touched lightly in the center.
12. Cool and Serve:
- Remove the dessert from the oven and let it cool slightly before serving. You can serve it warm or at room temperature.
13. Optional Garnish:
- For added flavor and presentation, you may garnish with a light dusting of powdered sugar, a dollop of whipped cream, or additional lemon and lime zest.

Tips:

- Ensure all ingredients are at room temperature before you start to allow for even mixing and better texture.

- Use a microplane to zest the lemons and limes to get fine zest without the bitter pith.

- Beat the eggs and sugar thoroughly to incorporate enough air for a light, fluffy sponge.

- Gently fold the flour into the mixture to avoid knocking out all the air you've incorporated.

- Use freshly squeezed lemon and lime juice for the best flavor.

- Check the cake for doneness by inserting a skewer or toothpick into the center; if it comes out clean, the cake is ready.

This Lemon & Lime Sponge Dessert combines the best of both citrus worlds into one delightful dish. With a tender, moist texture and a burst of lemon and lime in every bite, it's a vibrant and refreshing way to end any meal. Follow these tips closely to achieve the perfect sponge, and enjoy this bright and zesty dessert with your family and friends.
