Instructions:

1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Baking Dish:
- Grease a baking dish with the 2 tsp of butter to prevent sticking. Set aside.
3. Separate the Eggs:
- Separate the egg yolks from the whites. Place the yolks in a large mixing bowl and the whites in another clean, dry bowl.
4. Mix the Egg Yolks and Sugar:
- Add the 1/3 cup of sugar to the egg yolks and whisk until the mixture becomes pale and fluffy.
5. Combine Wet Ingredients:
- Gradually add the milk, 1/3 cup lime juice, and 1/4 cup lemon juice to the egg yolk mixture, whisking continuously until well combined.
6. Add the Zests:
- Stir in the 1 tbsp of lime zest and 2 tbsp of lemon zest into the mixture.
7. Incorporate the Dry Ingredients:
- Sift the 1/2 cup of self-raising flour into the wet mixture, folding it in gently until there are no lumps.

- Gently fold the beaten egg whites into the batter in three parts. Be careful not to deflate the mixture.
