Milk tart

Milk tart is a classic South African dessert that combines a creamy milk filling with a buttery, cinnamon-infused crust. This delectable treat is perfect for any occasion and is beloved for its smooth texture and comforting flavors. With simple ingredients and straightforward steps, you'll have a delightful dessert that's sure to impress.

Ingredients:

2 cups milk (1% fat)
480g
1 cinnamon stick
3g
1 egg
50g
1 tbsp corn flour
16g
2 cups all-purpose white wheat flour
250g
1/3 cup sugar
72g
1 tsp baking powder
5g
1/2 cup butter
110g
1 tbsp cinnamon
16g
1/2 cup powdered sugar
80g

Instructions:

1. Preheat the Oven: Preheat your oven to 350°F (175°C).
2. Mix the Dry Ingredients: In a medium-sized mixing bowl, sift together 2 cups of all-purpose flour and 1 teaspoon of baking powder.
3. Incorporate the Butter: Cut 1/2 cup of cold butter into small cubes. Add these to the flour mixture and rub in with your fingertips until the mixture resembles fine breadcrumbs.
4. Add Powdered Sugar: Stir in 1/2 cup of powdered sugar until well combined.
5. Press into Tart Pan: Press the mixture evenly into the bottom and up the sides of a tart pan (9-inch round tart pan would work well). Prick the base all over with a fork.
6. Bake the Crust: Bake in the preheated oven for about 15-20 minutes, or until the crust is lightly golden. Remove from oven and let it cool.
1. Heat the Milk: In a medium saucepan over medium heat, pour in 2 cups of milk and add the cinnamon stick. Heat until the milk almost reaches boiling point but don’t let it boil.
2. Prepare the Egg Mixture: In a separate bowl, whisk together 1 egg, 1 tablespoon of corn flour, and 1/3 cup of sugar until smooth.
3. Combine Egg Mixture with Milk: Slowly pour the hot milk into the egg mixture, whisking continuously to avoid curdling.
4. Thicken the Mixture: Pour the mixture back into the saucepan and continue to cook over medium heat. Stir constantly until the mixture thickens to a custard consistency.
5. Remove Cinnamon Stick: Take off the heat and remove the cinnamon stick. Allow the filling to cool slightly.
1. Pour the Filling: Pour the slightly cooled custard filling into the baked crust.
2. Smooth the Surface: Use a spatula to spread the filling evenly and smooth the top.
3. Add Cinnamon Topping: Dust the top with 1 tablespoon of ground cinnamon.
1. Allow Cooling: Let the tart cool to room temperature, then refrigerate it for at least 2-3 hours or until set.
2. Serve: Slice and serve chilled. Enjoy your delicious homemade milk tart!

Tips:

- Ensure the milk is at room temperature before you start for a smoother mixture.

- Use a whisk to thoroughly combine the corn flour with the egg to prevent lumps.

- Let the milk mixture cool slightly before adding the egg mixture to prevent curdling.

- For a more pronounced cinnamon flavor, you can increase the amount of cinnamon in the crust.

- Chill the tart in the refrigerator for at least an hour before serving to allow it to set properly.

- Sprinkle additional cinnamon or powdered sugar on top for an extra touch of sweetness and presentation.
