- Place the salmon on a baking sheet lined with parchment paper or lightly oiled.
- Bake the salmon for about 15-20 minutes or until it flakes easily with a fork.
- Let the salmon cool slightly, then flake it into small pieces with a fork.
3. Prepare the Mix:
- In a large mixing bowl, combine the cooled potatoes and flaked salmon.
- Add the capers and chopped scallions to the bowl.
- Crack the egg into the bowl and mix well to combine.
- Stir in the bread crumbs. The mixture should be cohesive but not too wet; adjust with more bread crumbs if needed.
- Season with salt and pepper to taste.
4. Form the Patties:
- Divide the mixture evenly and shape it into patties (about 8-10 patties depending on desired size).
